Description
A refreshing spicy watermelon salad with feta and hot honey that’s perfect for summer picnics, BBQs, or quick lunches.
Ingredients
4 cups cubed watermelon
½ cup crumbled feta cheese
2 tbsp hot honey
1 tbsp lime juice
1 tsp Tajin or chili powder
2 tbsp fresh mint, chopped
Optional: ½ cup cucumber, sliced thin
Optional: ¼ small red onion, sliced thin
Instructions
1. Chill the cubed watermelon in the fridge for at least 1 hour.
2. In a small bowl, whisk together hot honey, lime juice, and a splash of olive oil if desired.
3. In a large bowl, toss the chilled watermelon with Tajin until evenly coated.
4. Gently fold in feta cheese, mint, and any optional add-ins.
5. Drizzle the hot honey mixture over the salad and toss lightly.
6. Serve immediately, garnished with extra mint and a pinch of Tajin.
Notes
Use seedless watermelon for easier prep.
Make hot honey by warming honey with chili flakes for 5–7 minutes.
Add jalapeño slices if you want extra heat.
This salad is best eaten fresh but can be stored (without dressing) for up to 24 hours.
