Description

Juicy grilled chicken marinated in homemade chimichurri sauce made with fresh parsley, garlic, and red wine vinegar.


Ingredients

1 cup fresh parsley, chopped

3 tbsp fresh oregano or 1 tbsp dried

3 garlic cloves, minced

1 small shallot, chopped

1 serrano pepper, seeded and chopped

½ tsp kosher salt

½ tsp black pepper

½ tsp red pepper flakes

½ cup olive oil

â…“ cup red wine vinegar

2 lbs boneless, skinless chicken thighs


Instructions

1. Make the chimichurri sauce by combining all ingredients in a bowl.

2. Reserve half of the chimichurri for serving.

3. Place the chicken in a bowl and coat with the remaining chimichurri.

4. Let the chicken marinate for at least 30 minutes or up to 6 hours.

5. Preheat the grill to 500°F.

6. Grill chicken for 6–7 minutes per side, or until it reaches 165°F.

7. Let the chicken rest for 5–10 minutes after grilling.

8. Drizzle with reserved chimichurri and serve.

Notes

Use fresh herbs for best flavor.

Chicken thighs are juicier and more forgiving than breasts.

Always check internal temperature to ensure doneness.
